Quick, Nutrient Dense, Fall-Inspired Chicken Salad

FullSizeRender(8)for all of the chicken salad lovers (& doubters!) out there, this one is for you! //  gluten free  //  full of protein & healthy fats  //  fall inspired with dried cranberries, but of course dried fruit can be enjoyed all year round // this recipe can be made in 10 minutes or less, & is a good candidate for a meal made in advance (I’d consume within 3 days) //  even if you do not like mayonnaise (I disliked it as a child & still dislike it as a condiment on its own), I encourage you to try this!

Healthy, Gluten Free, Fall-Inspired Chicken Salad

Ingredients & Kitchen Tools:

  • ¼ cup Smart Balance Light Mayo (non-GMO, good source of Omega 3’s, & no Saturated or Trans Fats!)
  • 8 oz chicken, canned (fresh or frozen increase prep time)
  • 1/2 cup whole almonds, chopped or slivered
  • 1 stalk of celery, chopped
  • 1/8 tsp black pepper
  • 2 tsp lemon juice, fresh or bottled
  • 1/4 cup dried cranberries(looking out for sugar? get the one that states reduced sugar on the package!)

{need extra crunch & kick? add 1/4 cup chopped red onion}

:: Prep: wash & chop foods as needed :: Yield: 2 servings::

  1. mix all ingredients in a bowl & serve
  2. eat!

{ways to eat the chicken salad}

  • by itself for a high protein snack
  • in a lettuce or kale wrap
  • classic between two slices of bread
  • dip your fave veggies, crackers, or chips into it!
  • over zoodles, noodles, or rice
  • over a cooked acorn squash
