3 Ingredient Date Balls

literally 3 ingredients required // can’t get more simple than this folks! // love popping these in post-meal or having a few as a snack // $2.72 for all 16 balls & just $0.14 per ball

Ingredients & Kitchen Tools:

  • 12 pitted Medjool dates, Medjool Dates
  • 1/3 cup of Unsweetened coconut flakes, Bob’s Red Mill or Sweetened coconut flakes, Baker’s by Kraft
  • 1/2 cup chopped pecans
  • food processor or blender
  • bowl for mixing
  • 1/8 tsp vanilla if you want extra sweetness

:: Prep :: Remove Pit from Dates, Chop Pecans :: Yield: about 16 balls::

  1. blend dates in a food processor or blender until dates form a thick paste (scrape sides and blend as needed; if having trouble with getting the dates pulverized, add a tsp or 2 of water)
  2. add pecans to dates, or remove dates and add to a bowl with chopped pecans
  3. combine dates and pecans
  4. form dates into 1-inch diameter balls and roll in coconut shreds
  5. enjoy!

you can also roll in cacao nibs too for some extra deliciousness! (pictured below)
